I know I was all gung-ho about my Pinterest Kitchen and making all of these fancy pants meals. Some which were great and some… not so much.
Well, here’s the thing. Now that I am home for the summer, I have been focusing all of my energies on keeping Pea busy. It’s really become the summer of Pea. What project can I do with Pea, what words can she learn today, WHERE CAN I TAKE HER TODAY. We all know that Pea is an exotic creature of the preschooler species and she needs the following:
b. to be challenged
c. structure when necessary
d. ALL OF THE ATTENTION, ALL OF THE TIME
I’m not used to being home with her all day seven days a week, but I think I have done a good job so far of keeping her entertained. (Let’s not count this week, it’s been rough with allergic reactions and stomach bugs… next week will be better)
With that being said, I don’t have time for fancy meals. I just don’t.
I’m just writing to let you know that you will probably be eating the same things, on rotation, all summer long. And, well.. deal with it. Here are some of your choices:
- Baked ziti
- Chicken & rice
- Chicken & baked macaroni & cheese
- Chicken & mashed potatoes
- Chicken & baked potatoes
- Baked pasta & sausage
- Enchiladas w/”mexican rice” (that’s what it says on the bag I pour it out of)
Not only are these things easily made, but they don’t require much brain power from me as I know how to make them with my eyes closed.
If you don’t want any of the above things. Well, hey! There’s a telephone, you can order something or we can pile into the car to go get something to eat or we have bread- make a sandwich.
I love you, but I’m tired by the time I need to make dinner, I’m just keepin’ it real.
